Today my boys and I went to the Farmer's Market that occurs evry Saturday during the growing season. As we walked toward one booth the boys spotted a basket of beautiful eggplant and wondered what they were. We decided to get one and as my guys deliberated over which was the best eggplant, they listened to the growers telling me ways to fix it.
On Thursday evening I dug the first sweet potatoes from our little garden patch. My kids were looking forward to fixing them even though they have recently had baked sweet potato and didn't like it.
We decided tonight's supper would be a produce meal. Seth helped me dip the eggplant slices in egg & milk and then shake them in a bag of seasoned bread crumbs before frying them in a pan of olive and canola oils. We turned one of our sweet potato fries. Macaroni & cheese and watermelon rounded out the meal.
Both boys enjoyed their supper, especially the veggies. Having a hand in choosing and preparing them made the boys eager to eat them.
We also picked up Asian pears and pawpaws at the Farmer's Market and will be experimenting with them this week.
Hi! I am from SB. Cool blog, I want to cook some eggplant, now.
