Cracker Pizzas

Here's a quick and easy yummy snack. Lay one layer of crackers on a plate. (Here I used Triscuits, but you can use whatever you have.) Mix one can of tomato paste with Italian seasoning or garlic powder, basil, and oregano. Spread a little sauce on each cracker. (Save the rest of the sauce in the refrigerator for another use.) Sprinkle your favorite shredded cheese on top. Microwave on high for 40-50 seconds or until cheese melts and enjoy! These can also be made in larger batches in the oven. Just spread the crackers on a cookie sheet, top as listed above, then bake at 350 degrees for about 5 minutes or until the cheese melts.
Variation: use salsa instead of the tomato sauce and top with shredded cheddar or Mexican blend cheeses for cracker nachos.
