Supper From the Pantry

Last night I came home from work exhausted battling a cold that I've had for a week and wanting nothing more than to just crash for the rest of the night. It was extremely tempting to go get supper from Grandy's or Subway but I've been doing too much running out for food or resorting to packaged convenience foods again lately and so I talked myself into going into my well-stocked kitchen and using what I had on hand for supper. Here's what I came up with. I poured a little light olive oil in a large skillet and added some boneless, skinless chicken breast tenders from a bag that we had in the freezer. While these were cooking I seasoned them with salt free seasoning mix and pepper. I then reheated some leftover stir-fried vegetables from Wednesday's supper. I also heated some tortillas we had on hand. With the addition of some shredded cheese and crunchy tortlla strips, we had yummy chicken wraps with applesauce for supper. It was an easy filling supper for the boys and I (Jim was working late) that even included all four food groups!
